Sweet and Sour Chicken

I know I say this about every recipe so far, but hey it's true... this dish is amazing!  I found this recipe on mels kitchen cafe and it quickly became one of our favorites!  It does take some time to make it, but it is definitely worth it!

Ingredients:

3-4 boneless, skinless chicken breasts
salt and pepper
1 cup cornstarch
2 eggs
canola oil

Sauce:
3/4 cup sugar
4 Tbsp ketchup
1/2 cup vinegar
1 Tbsp soy sauce
1 tsp garlic salt

First cut your chicken breasts into chunks and season with salt and pepper.  Next dip the chicken in a bowl of cornstarch and then into a bowl of beaten eggs. Make sure that each piece is covered completely with the mixture.  Then put the chicken in a pan of canola oil (I usually put about a 1/2 inch to an inch deep of oil in my pan).  Fry till golden brown about 2-3 minutes on each side. Place in a single layer in a 9x13 pan. Preheat oven to 325. While the oven is preheating mix the sauce together.  Pour the sauce over the chicken and cook for an hour, but stir the chicken every 15 minutes during that time.  Serve over rice! This is so good that it will be a keeper for you too!
