Mulligatawny Soup


This is one of our family favorite soups!  I found this recipe on Melskitchencafe and we have loved it ever since!!! As my husband would say, "This soup is the Bomb". 

Ingredients:
olive oil
1/2 onion chopped
1 cup chopped carrots, peeled
1 cup thinly chopped celery
1/4 cup flour
2 tbsp curry powder
6 cups chicken broth
1/2 granny smith apple peeled and chopped
2 cups cooked rice
2 cups cooked, diced chicken or turkey

1 tsp salt
1/4 tsp dried thyme
1/2 tsp pepper
3/4 cup whipping cream.

In a large pot I put enough olive oil to barely coat the bottom of the pot. heat oil over medium heat until rippling and hot.  Then add onion, carrots, celery and cook, stirring often, until slightly softened about 3-4 minutes.  Stir in flour and curry and cook for 1 minute stirring constantly.  slowly stir in chicken broth until well combined and bring the soup to a simmer.  Cook at a low simmer for 8-10 minutes stirring occasionally.  Add the chopped apple, rice, chicken, salt, thyme, and pepper.  Simmer 8-10 stirring occasionally to prevent sticking, until the veggies are tender. Then add cream, warm soup through and serve.
