Homemade Hashbrowns

I love hash-browns but I wanted to find a way to make them myself... especially since a bag of potatoes is about the same price for a bag of hash-browns.  These hash-browns are so easy, it saves alot of money, you can also make and freeze for later!

Wash and scrub the potatoes.  Then poke the potato with a fork, so your potato doesn't explode in the oven and it will definitely save some unneeded cleanup.  Place potatoes in a baking dish with a lid.  Bake covered for about 1 1/2 hours at 350.  Let the potatoes cool, it will take a few hours.  Then I peel the skins of the potato and grate the potato up with a cheese grater.  You can cook it up and eat right away or you can place it on a cookie sheet with wax paper. Put a thin layer of grated potatoes, then place in the freezer for a couple of hours. When frozen then place in a Ziploc bag and put back in freezer for future use.  When you cook it if frozen just cook a little longer!  I love using lots of butter for my hash-browns.  Don't turn potatoes to much on the skillet or it won't turn out nice.  Let it get a beautiful golden brown then flip!  You will love this recipe!  I have also diced up the potatoes instead of grating them, it works great for any other dish that calls for potatoes/hash-browns!
