Beef Chili Enchiladas




 This recipe has become one of my favorites recently, it's quick, easy and inexpensive. My mother in-law made this delicious dish when she came out to visit and to help with the kids. My boys like it, which is a big deal for us since we have a toddler who is a very picky eater.

Ingredients:
1/2 lb ground beef
1 small onion
3 Tbsp McCormick Chili Original Seasoning
14 1/2 oz diced Tomatoes
8 oz tomato sauce
2 (15 oz) Chili beans, kidney, or pinto beans
6 inch round corn tortillas

Brown hamburger and onions in a large skillet.  Then add chili seasoning, diced tomatoes, tomato sauce, and beans. Bring to a boil; cover. Reduce heat and simmer for 10 minutes, stirring occasionally. Once the chili is done spread a little on a plate and top it with a corn tortilla, then another layer of chili and top again with a tortilla, add one last layer of chili and top off with  (Cheese, green onions, sour cream, lettuce, tomatoes, etc.)  Hope you enjoy!!!
